This was a very interesting find, as their daughter, Mary Latham, was thought to be a Wharton (by her granddaughter).

There are a couple of just possible Johns in the 1871 census:

at 83, Hornby Street:

Mary Latham	Wife	32		born: Liverpool
Margorit Latham	Daughter	9		born: Liverpool
Elizabeth Latham	Daughter	5		born: Liverpool

at 18, Gladstone Street:

John Latham	Head	40	Carter	born: Liverpool
Mary Latham	Wife	30		born: Liverpool

However, the ages are wrong.
Mary, their daughter, appears to be staying with her grand parents in 1871, with Henry and William (whom I have assumed are siblings).
It is possible that John Latham and his wife died before 1871.
